Equipment

  • Hand mixer or electric mixer (to whip the aquafaba to stiff peaks)
  • Stainless steel or glass mixing bowls (plastic bowls can retain oil, making it harder to whip)
  • Prepared baking sheets lined with parchment paper
  • Stand mixer (optional, but helpful for whipping)

Ingredients

  • 1/2 cup aquafaba liquid from a can of chickpeas
  • 1/4 teaspoon cream of tartar helps form stiff peaks
  • 1/4 cup almond flour or all-purpose flour for a non-gluten-free option
  • 1 tablespoon almond butter for a hint of healthy fat
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder if making a savory version
  • 1 teaspoon italian seasoning optional for extra flavor
  • Or Replace garlic powder and italian seasoning with 1 teaspoon vanilla extract for a sweet version

Instructions

Step 1: Preheat & Prepare

  • Preheat your oven to 300°F (150°C) and line prepared baking sheets with parchment paper.

Step 2: Whip the Aquafaba

  • In a separate bowl, add aquafaba and cream of tartar. Using a hand mixer or stand mixer, beat on medium speed until stiff peaks form. This should take about 5-7 minutes.

Step 3: Fold in the Dry Ingredients

  • Gently fold in almond flour, baking powder, garlic powder, italian seasoning, and salt. If making a sweet version, swap out the savory seasonings for vanilla extract.

Step 4: Shape & Bake

  • Using a spoon, drop the mixture onto the prepared baking sheets, shaping into small rounds. Sprinkle sesame seeds on top for extra texture. Bake for 20-25 minutes until golden brown.

Step 5: Cool & Store

  • Let them cool completely before transferring them to an airtight container. This prevents them from deflating.

Notes

Tips for Success
  • Use stainless steel or glass bowls instead of plastic bowls for whipping aquafaba.
  • Store leftovers in an airtight container to prevent drying out.
  • Bake until golden brown for the best texture.
  • Try adding different seasonings.
