Ingredients
  

  • 6 cups diced potatoes you can use frozen potatoes, fresh potatoes, or hash browns
  • 2 cups sharp cheddar cheese shredded
  • 1 cup Monterey Jack cheese shredded (or Colby Jack)
  • 1 can 10.5 oz cream of mushroom soup (for a creamier texture)
  • 1 cup sour cream
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp black pepper
  • ½ tsp garlic salt
  • ½ white onion finely chopped
  • 2 tbsp butter melted
  • Non-stick cooking spray
  • ½ cup green onions for garnish

Instructions
 

  • Prep the Potatoes: If you’re using frozen potatoes, no need to thaw. For raw potatoes, peel and dice into cubes. If you’re using hash browns, toss them straight into the crockpot.
  • Layering the Ingredients: Spray the inside of your crockpot with non-stick cooking spray to avoid sticking. Then, add the potato mixture (potatoes, onion, sour cream, cream of mushroom soup, garlic powder, onion powder, black pepper, and melted butter).
  • Add the Cheese: Sprinkle half of the sharp cheddar cheese and Monterey Jack cheese into the mix, saving the remaining cheese for later.
  • Slow Cook: Set your crockpot to low and let it cook for 4-5 hours, stirring occasionally to make sure everything cooks evenly.
  • Final Cheese Layer: Once the potatoes are tender, sprinkle the remaining cheese on top and cook for an extra hour to get that melty, gooey finish.
